Description

Cauliflower steak, roasted or grilled, offers a wonderful, healthy twist to your meals. This dish is crispy on the outside, tender on the inside, and perfectly caramelized.

You can elevate this humble vegetable into a satisfying main course or a delectable side dish with just a few pantry staples like olive oil, spices, salt, and pepper.

Ingredients
  • 1 Whole Cauliflower (large head) (Approx. 2 lbs, sliced into 1-inch thick steaks)
  • 2 tbsp Olive oil (Extra virgin preferred)
  • 1/2 tbsp Smoked paprika (Optional: adjust to taste)
  • 1/2 tbsp Garlic powder
  • 1/4 tbsp Ground cumin (Optional: can add more for flavor)
  • 1/4 tbsp Black pepper (Freshly ground)
  • 1/2 tbsp Sea salt (Adjust to taste)
Instructions
  1. Preheat your oven

    Preheat your oven to 400°F (200°C) for roasting, or heat up the grill to medium-high if grilling.

  2. Prep the cauliflower:

    Remove the outer leaves and trim the cauliflower stem, but leave the core intact to hold the steaks together. Slice the cauliflower into 1-inch thick "steaks." You may get 2–4 steaks depending on the size of your cauliflower.

  3. Season:

    In a small bowl, mix the olive oil, smoked paprika, garlic powder, cumin, black pepper, and sea salt. Brush both sides of the cauliflower steaks with the mixture, ensuring they are evenly coated.

  4. Roast:

    Place the seasoned cauliflower steaks on a baking sheet lined with parchment paper. Roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.
    OR
    Grill: Place the cauliflower steaks on the preheated grill, cooking for about 5-7 minutes per side until you achieve a charred, caramelized exterior.

  5. Rest:

    Allow the cauliflower steaks to rest for 5 minutes before serving. This helps the flavors settle and ensures the perfect texture.

  6. Serve:

    Garnish with fresh herbs or lemon wedges for added brightness

  7. Spread the bean mixture in an even layer on a baking sheet. Sprinkle the vegan cheese 🧀 shreds and vegan parmesan cheese on top.

  8. Bake for 10-15 minutes 🕒, or until the cheese is melted and bubbly.
